In a large bowl, whisk together the oil, vinegar, mustard, coconut palm sugar, and salt. Add the endive, apples, and onion and toss with the dressing. Arrange the arugula on a serving platter and top with the tossed salad. Garnish with the walnuts and serve.

This salad is a feast for all of the senses, something that’s essential for me given my CADD (Cooking Attention Deficit Disorder), an undocumented, but very real, phenomenon. Brown makes me feel down, and this salad is anything but. Gorgeous hues of deep purple, red, pink, and green are a rainbow for both plate and palate. Anyone who thinks winter is a fresh-produce dead zone has never tasted this salad, with its perfect balance of seasonal goodies and light, citrusy dressing.

Serves 8

4 medium beets, scrubbed and dried

3 tablespoons plus 4 teaspoons extra-virgin olive oil

Fine sea salt and freshly ground black pepper to taste

1 large head butter lettuce, cut into bite-sized pieces

1 large or 2 small fennel bulbs, stalks and tough core discarded, thinly sliced, fronds reserved for garnish

1 large grapefruit, segmented, juice reserved

2 large, firm, ripe avocados, pitted, peeled, and cut into wedges

½ cup pomegranate seeds

2 tablespoons coarsely chopped fresh dill

Juice of 1 lime

1½ teaspoons pure maple syrup

1 teaspoon Grainy Mustard
