Vegan Sultan’s Soup
This soup is an interpretation of a meaty soup called Sultan’s Soup which is light and delicious, despite its name which might make you think it’s rich and loaded with luxurious ingredients.

6 oz. firm tofu, cut into cubed
2 tablespoons olive oil
3 tablespoons all-purpose flour
1 1/2 cups almond milk
3 cups vegetable stock
1/4 cup ground almonds
Salt and pepper to taste
1 pinch nutmeg
