8 PICKLED JALAPEÑO SLICES, HALVED

8 SLICES BACON, HALVED CROSSWISE

Soak 16 wooden toothpicks in a bowl of warm water for about 30 minutes. Preheat the oven to 375°F. Line a rimmed baking sheet with aluminum foil or parchment paper (for easier cleanup) and set a wire rack on top.

Using a paring knife, make a slit along one side of each date (don’t cut the dates in half by slicing all the way through). Remove the pits. Cut the cream cheese into ½-teaspoon-size pieces that will fit into the slit dates.

Fill each date with a piece or two of cream cheese—don’t overstuff them—and then tuck in a pickled jalapeño half-slice. Pinch the date closed.

Lay a few of the bacon pieces on a work surface. Roll up a date, nice and snug, in each piece. Turn the date seam-side up if it isn’t already, spear it through the side with a soaked toothpick, and set it on the wire rack. Repeat with the remaining bacon and dates.

Bake the bacon-wrapped dates until hot throughout and the bacon is browned and lightly crisped, about 25 minutes. Let cool for 5 minutes, and then transfer to a platter and serve right away.
