I admittedly am not a big seafood eater. It’s mainly because, growing up in middle Georgia, “fresh seafood” was a misnomer! Most imported saltwater fish tasted too “fishy” to me. Our fresh fish consisted of what we caught in our spring-fed pond, which were mostly catfish and bream, or the occasional crappie. I learned to love saltwater crustaceans like crab and lobster when I visited coastal cities like Daytona Beach on summer vacations. I like mild fish best, so this citrus cod bake is perfect for me. SERVES 4
