DIRECTIONS
Preheat oven to 350 degrees. Prepare a mini muffin pan by greasing it with extra butter, followed by a dusting of flour. Tap the pan upside down to remove any excess flour.
Combine salt, baking powder, and 4 cups flour in a bowl. Set aside. In a separate bowl, combine buttermilk, orange juice, and vanilla. Set aside.
Cream 4 sticks butter and sugar together for about 5 minutes in a stand mixer. Scrape down the sides of the mixing bowl, if necessary. Add the eggs, one at a time, to the mixer, followed by the orange zest. The color of the mixture will become golden.
Alternate adding the dry and wet ingredients into the mixer while the speed is on low.
Add the batter to the muffin pan, and cook until golden. It should spring back a bit when you touch it.
Optional Glaze:
Combine sugar, Cointreau, and cardamom in a small bowl, and stir. Dip the top of the warm cake into the bowl and rest it on a cookie rack. It is best to have a plate underneath to capture any rogue glaze that drips off.
