Laing Linguine
Here’s a recipe I learned from Eduardo, a Filipino who lived for a long time in Australia. The dish was innovated out of necessity: “I wanted to make laing… but we ran out of rice. The supermarket was closed, and all I had was a pack of linguine. I remembered one of my Aussie friend’s favorite things to eat is pesto pasta…” And so the idea of a laing-inspired Pesto Linguine was born. This is a really cool East meets West fusion dish. While the taro (gabi) offers more bitterness, the use of pili nuts offsets this with additional sweetness. The coconut milk base is creamier than an olive oil-based pesto, but the thickness is cut with the citrus lemon juice.
