Pinnekjøtt is a lamb ribs recipe in which the lamb is cooked in vegetable stock, and then the ribs are served with mashed roots and other sides.

Ingredients (8 servings)

Vegetable Stock

16 cups water

2 leeks

2 onions

2 carrots

8 juniper berries

1 tablespoon coriander seeds

2 bay leaf

Lamb Ribs

4 ½ lbs. lamb ribs

12 potato

4 Christmas sausages

Mashed roots

Parsley butter sauce

Preparation

Cut up all of your vegetables and combine them with the seasonings in a saucepan. Allow about 2 hours of cooking time before straining the stock. Place your vegetable stock in a large pot and bring to a boil; then add your lamb ribs to the liquid. Allow the meat to soak in the flavor for one to one and a half hours with the stock only simmering. If you want to serve sausages with the lamb ribs, add them in for the last 30 minutes. Pour some of the fat over the meat and place it on a baking dish. Just before serving, cook it for 5-10 minutes at 250 F. Serve.
