Chicken Rishta (Chicken Mince Ball in a Saffron Sauce) Curry
Rishta is a popular Kashmiri dish that is traditionally made with boneless mutton cubes that are pounded with wooden mallets for hours by expert Kashmiri wazas (cooks) till they acquire their typical spongy texture.
For reasons of health as well as convenience, we present here a variation that is made with chicken mince.
Ingredients
Chicken mince -1/2 Kg (18oz) (2 cups)
Arrowroot powder- 2 tablespoon
Onion-2 large (chopped)
Ginger-2 inch piece (chopped)
Tomato puree- 2 tablespoon
Turmeric (Haldi) powder-1 teaspoon
Black cardamom (Badi Elaichi) - 2
Green cardamoms (Chhoti Elaichi) -4
Cloves (Laung) - 4
Cinnamon (Dalchini) - 1 inch (2.5 cm)
Red Chilli powder-1/2 teaspoon (enough only to add flavour and not to make it spicy)
Cooking Oil-1 tablespoon
Ghee (Clarified butter)-1 tablespoon
Water-2 cups
Saffron (Kesar) -1/2 teaspoon (dissolved in 2 tablespoon hot water)
Salt- 1 and ½ teaspoon or to taste
Method
In a bowl, mix together the chicken mince, arrowroot powder and half teaspoon salt.
Make into egg size balls.
In a wok/pan, add the water, turmeric and the chilli powder and put it on your heat source.
As the mixture comes to a boil, gently add the chicken balls.
Cover the wok/pan with a lid, reduce the heat (to SIM on a gas stove) and let the chicken balls cook for 1o minutes before turning off the heat source.
In another wok/pan, add the oil and the ghee, and put it on your heat source.
When the oil heats up, add the whole spices, the chopped onion and the chopped ginger.
Stir well till the onions become translucent.
Add the tomato puree and 1 teaspoon salt.
Stir well again.
Now, add the chicken balls along with the water/stock these were cooked in to this wok/pan.
Add the dissolved saffron and bring to a boil.
That’s all.
Your delicious Chicken Rishta (Chicken in a Saffron Sauce) is ready.
