Procedure:
Heat 2 tbsp. of oil.
Melt anchovies on medium flame. Add cumin seeds, curry leaves, fenugreek seeds and mustard seeds and temper for 1 minute.
Now add onions, ginger, chilies and garlic. Sauté for 3 minutes.
Add zucchini and season with pepper flakes, salt, turmeric and pepper. Stir fry for 3 minutes.
Now add tomatoes and combine well. Cook for 15-20 minutes or until zucchini is tender and a thick tomato gravy has formed.
Transfer to a serving bowl and serve.
