Beans And Rice Tacos
You can never go wrong with this classic combination.
Preparation time: 20 minutes
Cooking time: 20 minutes
Servings: 15-20
Ingredients:
2-3 tablespoons of oil
2 cups of cooked brown rice
2 (15-ounce) cans of black beans, undrained
1 cup of picante salsa
1 cup of chopped onion
3-4 chopped cloves of garlic
3-4 fresh jalapeno peppers, diced
1 tablespoon of chili powder
1 tablespoon of ground cumin
20 corn tortillas
Directions:
1. Heat the oil in a large skillet, add the veggies and sauté. Add the rest of the ingredients excluding the tortillas. Bring to a boil and turn down the heat to simmer. Uncover and simmer for 20 minutes or until it is no longer runny.
2. In the meantime, fry the tortillas in oil until it is soft and pliable. Fold and sprinkle lightly with salt.
3. Spoon about 1/4 cup of the bean mixture into the tortillas and top with your favorite toppings.
