Many years ago, my sister Ximena had a lady friend from Germany who made this dish. Her friend said that since she could not get sauerkraut in Ecuador, she had figured out a way of preparing something that resembles the famous German specialty kasseler Rippenspeer. I'm happy she shared this recipe with my sister, because it has become a favorite of my family and friends.
