Directions:
1. Combine the cornstarch, garlic, ginger, broth, soy sauce and sugar in a bowl.
2. Mix cornstarch, broth, soy and sugar until smooth. Set aside.
3. Heat 1 tbsp. of oil in a skillet and stir fry the beef for 5 minutes. Set aside
4. Heat the remaining oil and sauté the mushrooms, bok choy and bell pepper for 5 minutes. Set aside.
5. Pour the broth mixture into the skillet and bring to a boil.
6. Transfer the beef and vegetables back into the skillet and heat for 2 minutes.
7. Serve with rice.
