Put the lamb in a dish and drizzle over enough olive oil to lightly coat and season with salt and pepper.

Heat a large frying pan (skillet) over a medium-high heat. Add the lamb and cook for 5 minutes, turning once, or until cooked to your liking – it should still be pink in the middle. Remove from the pan and leave to rest on a warm plate, covered, for 5 minutes.

Add the capers to the pan and cook, turning often, for 3 minutes or until they start to turn golden and crisp. Remove with a slotted spoon and drain on kitchen paper.
