This is comfort food at its best. Lentils are quick and easy to prepare with none of the soaking time required by other pulses, and they also make an immensely satisfying dish when combined with a touch of pork fat, be it bacon or chorizo , or in this case both.

The addition of artichokes gives an everyday supper dish a bit of pizzazz. Some cooks will add the artichokes directly to the pot but, since lentils are famously unpredictable, their cooking time ranging from 20 minutes to an hour, this could be a recipe for disappointingly soggy artichokes. I would rather cook the artichokes and potato apart.
