165g unsalted butter, at room temperature, plus more for greasing tins

175g soft light brown sugar

3 large eggs, free-range or organic

125ml golden syrup

185g good-quality dark chocolate (at least 70% cocoa solids)

250ml buttermilk

Icing sugar, for dusting

FOR THE FILLING

250ml double or whipping cream

8 slices peeled fresh ginger
