¼ cup (60 ml) soy sauce
¼ cup (60 ml) mirin
¾ cup (180 ml) water
1 tablespoon rice vinegar
4 soft-boiled eggs (see here), peeled
Place all the liquid ingredients in a large zip-top bag, and stir to combine. Add the eggs.
Place the bag in a narrow container (a measuring cup works well), and arrange the eggs so they are completely submerged in the marinade. Fold a paper towel in half three times to form a rectangle, and place it in the bag over the eggs; this paper towel “lid” will make sure the eggs remain submerged. Seal the bag.
Marinate the eggs in the refrigerator for at least 6 hours but no more than 12, after which they will become too salty. If possible, move the eggs around every couple of hours to ensure even coloring.
Discard the marinade. Store the eggs in an airtight container in the refrigerator for up to 3 days. Slice them in half to serve.
