Egg Muffins

Ingredient List:
Olive oil- 2 tbsp.
Bacon slices- 4
Onion- ½ cup
Chopped spinach- ½ cup
Chopped mushrooms- ½ cup
Eggs- 6
Feta cheese- ¼ cup

Instructions:
In a pan, brown your bacon slices.
Remove and add in the olive oil.
Fry the onions then add in the mushrooms and the spinach and cook till soft.
Remove from heat and blend in a blender.
Now mix together the blended onion mixture, bacon slices, eggs and the feta cheese.
Pour the batter in to prepared muffin cups and put to bake in preheated oven for 30 minutes.
Serve!
