8 ounces cremini mushrooms, halved or quartered, depending on size

9 ounces halloumi or queso para freir, cut into ⅝-inch cubes

1 large eggplant, cut into ¾-inch chunks

3 cups (about 1 pound) cherry tomatoes

1 tablespoon ras el hanout

1 teaspoon sea salt flakes, plus a large pinch

3 tablespoons olive oil
