Steamed Mussels in Garlic Wine Broth
SERVES 4
Mussels are incredibly easy to make and they have a lot of unique flavor. In this recipe they pair perfectly with a garlic wine broth.
4 POUNDS LIVE MUSSELS
2 CUPS DRY WHITE WINE
2 MEDIUM SHALLOTS, SLICED
1 TABLESPOON MINCED GARLIC
½ TEASPOON SALT
6 TABLESPOONS BUTTER, CUT INTO PIECES
2 TABLESPOONS CHOPPED FRESH PARSLEY
1 TABLESPOON CHOPPED FRESH BASIL
1 TABLESPOON CHOPPED FRESH CHIVES
1. Rinse the mussels in cool water and scrub them well. Discard any dead mussels and cut the beards from the rest.
2. In a stockpot over medium heat, combine the wine, shallots, garlic. Stir together and simmer the mixture for 5 minutes.
3. Add the mussels, cover, and increase the heat to high. Cook for 5 minutes, or until the mussels have opened. Discard any that do not open.
4. Stir in the butter and herbs and remove the stockpot from the heat.
5. Spoon the mussels and broth into bowls to serve.
