The appetizers and breads in this chapter are full of flavor and will satisfy your predinner appetite or hold their own in any meal. If you like bread and butter, try the flavorful Rosemary Olive Bread with a good extra-virgin olive oil instead of butter.
A little planning can go a long way with appetizers. Many of these recipes can be made in advance, and you can just cook and serve when you’re ready. I like to make the Cheese Rolls, Spinach Pies, and the Meat-Filled Phyllo recipes right up to the point of baking, but instead of cooking them, I put them on a baking sheet and freeze them. When they’re frozen, I put them in an airtight bag or container and store them for a month or two. Then they’re ready to go in the oven whenever I need a starter for a meal.
