Endive and walnut salad

Alongside the meatballs (p89) and Jansson’s temptation (p96), both rich and full of cream, I always fancy something fresh and crisp and sharp. This is my favourite take on a salad we make (or that Ingela often tasked one of our guests with bringing along). The bitter endive marries well with the sweet pear and salty, sharp Roquefort, but if you want something slightly less rich, you can leave the cheese out.

SERVES 6–8 AS PART OF A SMÖRGÅSBORD

4 heads chicory/endive

2 pears (ripe is ideal, but they’re an elusive beast; firm is better than mushy)

100g/3½oz Roquefort

1tsp cider vinegar

1tsp Dijon mustard

1tbsp olive oil

Salt and black pepper

50g/⅓ cup walnuts, toasted and chopped

Small handful of pomegranate seeds

20g/1 cup parsley leaves

20g/½ cup cress
