2½ pounds turnip greens, washed, ribbed, and finely chopped (about 4 cups)

1 teaspoon kosher salt, plus more to taste

1½ pounds turnips, peeled and cut into ¼-inch dice (about 2⅓ cups)

12 cups Sunday Vegetable Broth (page 539)

2 tablespoons Pepper Vinegar (page 518) or white wine vinegar, plus more to taste

12 large eggs

Freshly ground black pepper to taste
