PREPARATION:
1. In a pan or on an indoor grill over high heat, sear the tuna fillets.
2. Combine the olives, capers, and tomatoes in a bowl. Season with olive oil, salt, pepper, and a squeeze of lemon juice.
3. Remove the tuna from the grill, top it with the olive-tomato mixture, and garnish with the parsley.

This is one of the first salads I made on TV, striking and easy to put together. The fennel gives off a light anise flavor, which combines well with salmon. If you have time, you can toast the fennel in a pan to enhance its flavor. Everyone loved it on the show and I’m sure this recipe will liven up your taste buds at home.
