OPAKAPAKA WITH LOBSTER AND SHRIMP BAKED IN PARCHMENT WITH ASIAN BUTTER

SERVES 4

My favorite thing about this dish is watching the smiles that appear on our guests’ faces at the first whiff as their server cuts open the parchment.

ASIAN BUTTER

½ cup unsalted butter, at room temperature

1½ teaspoons soy sauce

½ teaspoon minced garlic

½ teaspoon Asian sesame oil

¼ teaspoon Vietnamese garlic-chile sauce

1 tablespoon minced fresh cilantro

1 carrot, peeled and julienned

2 leeks, white part only, split and thinly sliced

¼ cup sliced green onion, green part only

2 tablespoons peeled and minced fresh ginger

1 pound opakapaka fillet, cut into 4 equal portions

4 large shrimp, peeled and deveined

Meat from 4 lobster claws

½ cup sliced shiitake mushrooms

Salt

Freshly ground black pepper
