South of the border squash casserole

Yield: 8 servings

Ingredients:

6 tbsp butter, divided

1 medium white onion, diced

1 medium red bell pepper, diced

1 medium green bell pepper, diced

2 jalapenos, seeded and diced

2 lbs yellow squash, halved lengthwise, seeds removed, sliced, steamed, drained and cooled

1 cup diced Velveeta

1/2 cup shredded Cheddar

1/2 cup shredded Monterey Jack

1 tsp sea salt

1/2 tsp ground black pepper

2 1/2 cups crumbled Ritz crackers

Instructions:

Preheat oven to 325 F

Coat a 2-quart casserole dish with a non-stick vegetable oil spray

Over med heat, melt 3 tbsp butter in a large skillet. Add onion and bell peppers. Cook, stirring frequently, until onions are translucent.

Add jalapeno and cook 5 minutes.

Stir in cooled squash.

Fold in cheeses, salt, and pepper.

Spoon skillet mixture into prepared casserole dish, then sprinkle with crumbled Ritz crackers.

Melt remaining 3 tbsp butter and drizzle over crumbled crackers.

Bake casserole for 20 minutes, or until contents are bubbly.

Cool 10 minutes before serving to prevent hot cheeses from running.
