This is easy to prepare and great over rice.

Cooking Time: 45 minutes

Servings: 12

Ingredients: • ½ cup olive oil

• ½ cup flour

• 1 small chopped onion

• 3 minced garlic cloves

• 2 chopped celery stalks

• 3 cup seafood stock

• 2 cups drained stewed tomatoes

• Salt and pepper to taste

• ½ tsp. hot sauce

• ½ tsp. Cajun seasoning

• 4 lbs. tilapia fillets

Directions:

1. Preheat the oven to 350 degrees.

2. Combine the olive oil and flour in a pan to create a roux.

3. Keep stirring for 10 minutes.

4. Stir in the onion, garlic and celery and cook for 5 minutes.

5. Add the tomatoes and fish stock.

6. Season the dish with salt, pepper, hot sauce and Cajun seasoning.

7. Place the tilapia in a baking dish in a single layer.

8. Cover the tilapia with the sauce. 9. Bake for 30 minutes. 10. Serve over rice.
