FISH-’N’-CHIP PIE
THIS RECIPE CAME ABOUT ENTIRELY BY ACCIDENT. I had been trying unsuccessfully for years to get Geoffrey to eat peas. He loves so many green vegetables, particularly the ones we grow such as brussels sprouts, broccoli, and kale, but I couldn’t get him to swallow one measly pea. After trying minty, mushy, mangetout, marrow root, sugar snap, raw, steamed, shelled, and sautéed peas, I had almost given up. Even the darling “Give Peas a Chance” T-shirt from a stateside visit to Whole Foods couldn’t charm him.
About a year later, it dawned on me. What if I popped some peas into a fish-and-chips tart? Going out for fish-and-chips is a bit of an indulgence here on the farm, so I figured I could get away with such a lark. Soon I found myself in the kitchen, donning an apron, layering peas and fish in a creamy sauce, and topping the filled pie crust with a handful of chunky chips before popping it into the oven.
Voilà, the peas were eaten. In fact, Geoffrey thought the pie was better than any fish-and-chips he’d had before, and we grown-ups thought it was pretty darn good too.
