COMBINE the grated potatoes and onions in a colander and press to remove as much water as possible. Transfer them to a large bowl, using both hands to squeeze out even more water as you go. Add the salt, pepper, egg and egg white, and flour and fold to combine.
HEAT ¼ inch oil in a large cast-iron skillet or heavy-bottomed frying pan over high heat until very hot. (Drop a piece of potato in the oil and if it sizzles, the oil is ready.)
LINE a plate with paper towels and set aside. Using two soup spoons, scoop out about 2 tablespoons of the potato mixture and form it into a patty. Place it in the oil and flatten the center so the patty is evenly thick. Working in batches so as not to overcrowd the skillet, make more latkes and fry until deep golden brown, about 3 minutes per side. (As you get to the bottom of the bowl, liquid will have leached from the potato mixture—squeeze it out!) Remove the fried latkes to the lined plate to absorb the excess oil.
SERVE immediately with sour cream and applesauce on the side!
