The Morita Chili Pepper
Morita chilies are a type of jalapeño that has been dried and smoked. They tend to be a bit hotter than regular jalapeños and less smoky than chipotles.
Serves 6
Thicken the sauce by adding ¼ cup flour and cooking it on the stove until it becomes a gravy. Serve drizzled over the meat or over mashed potatoes.
CITRUS VEAL
4 veal cutlets
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
1 teaspoon salt
1 large white onion
2 garlic cloves
2 oranges
1 tablespoon vegetable oil
1 cup orange juice
¼ cup lime juice
Preheat oven to 350°.
Season both sides of the veal cutlets with cinnamon, cloves, and salt.
Remove the skin from the onion and cut into 1-inch pieces. Remove the skin from the garlic and cut thinly. Cut the oranges into ¼-inch rounds with the rind remaining on the oranges.
Pour the oil into the bottom of a medium-sized baking dish. Place the veal cutlets in the dish so that they don't overlap. Pour the orange juice and lime juice over the veal. Place the onions, oranges, and garlic on top.
Cover, and cook for 1 hour.
