TYPES OF LENTILS
Lentils can be classified by size, by color, or by whether or not the legumes are whole or split. Brown lentils are the most commonly available variety. They take longer to cook than red or yellow lentils, so be sure to add about 10 minutes to your cooking time if you are substituting brown lentils for red or yellow varieties. It’s not a good idea to substitute canned lentils for dried lentils in most recipes—the boiling required to cook dried lentils will turn the canned ones into mush.
