Remove the Alcohol

If you don’t want alcohol in your noncooked recipe, take slightly more than you need for the recipe and sauté it over medium heat for a few minutes. The alcohol will evaporate but you will be left with all the flavor.

Creamy Red Chicken with Mushrooms

Serve with Cucumber Mousse (see recipe in Chapter 7) for an interesting blend of flavors.

INGREDIENTS | SERVES 4

1 pound fresh white button mushrooms

1 large red onion

1 garlic clove

2 medium red tomatoes

1 red bell pepper

2 fresh jalapeño chilies

4 boneless, skinless chicken breasts

2 cups chicken broth

1 sprig epazote

1⁄2 cup heavy cream
