Primavera

Serves 4

½ cup diced onion

½ cup diced carrot

¼ cup diced red bell pepper

2 tablespoons olive oil

½ cup chicken broth

1 cup fresh asparagus spears, cut into 1″ pieces

1 cup broccoli florets

½ cup heavy cream

½ cup frozen peas

½ cup grated Parmesan cheese

salt and pepper to taste

Primavera means “spring” in Italian, and this pasta dish is loaded with fresh vegetables that would be available in spring. A light cream sauce (compared to Alfredo or Carbonara) is the vehicle for the veggies. Serve it with farfalle (butterfly or bow-tie shaped pasta) for a pretty presentation.

In a 6-quart soup pot, sauté onions, carrots, and red bell pepper in oil until tender.

Add chicken broth, asparagus, and broccoli. Simmer uncovered for 5 minutes.

Add cream and peas; simmer for 5 minutes more.

Stir in Parmesan cheese and remove from heat.

Season with salt and pepper. Serve sauce over cooked pasta.
