Fried Shanghai Noodles

One bite of these delicious noodles and you will swear you are sitting in the middle of Shanghai. These noodles are highly popular and once your family gets a taste of it, they will be begging for seconds.

Makes: 2 to 4 Servings

Total Prep Time: 20 Minutes

Ingredients for the marinade and pork:

6 ounces of pork, lean and sliced into strips

¾ tsp. of cornstarch

½ tsp. of soy sauce, light

1/8 tsp. of soy sauce, dark

1 tsp. of wine, shaoxing

Dash of sugar

Remaining Ingredients:

3 tbsp. of vegetable oil, evenly divided

8 mushrooms, shiitake and thinly sliced

1 pound of udon noodles

2 ½ tsp. of soy sauce, dark

2 ½ tsp. of soy sauce

¼ tsp. of sugar

1 bunch of bok choy, washed and trimmed
