Sri Chaitayna–the founder of Vaisnavism (one of the major branches of Hinduism) and a medieval social reformer–was born here. The Vaisnavas preserve a significant vegetarian culinary legacy–particularly in the recipes of kedgeree (khichuri).

The eastern Indian states include West Bengal, Assam, Orissa, Manipur, Tripura and Nagaland among others. The bulk of the region lies on the east coast of India by the Bay of Bengal.

Though vegetarianism was the norm among the largely peaceful local population, the plentiful availability of fresh fish has also become a culinary favourite. However the non–Hindus and the tribal people always ate meat. Hindu religion too adapted to fish eating with qualifications and sanctions, such as not eating it on certain days of the week or during some religious rites and forbidding specific social groups.
