1 tablespoon soy sauce

1 tablespoon Chinese rice wine or dry sherry

2 teaspoons cornstarch

1 pound flank steak, cut against the grain into ¼-inch-thick slices

sauce

2 tablespoons soy sauce

2 teaspoons hoisin sauce

2 teaspoons chili sauce

2 teaspoons Chinese rice wine or dry sherry

1 teaspoon oyster sauce

1 teaspoon sesame oil

½ teaspoon crushed red pepper flakes

1 tablespoon peanut or vegetable oil

2 leeks, white part only, thinly sliced

1 teaspoon minced fresh ginger

1 scallion, cut into 3-inch lengths and shredded
