Black sesame and matcha tuiles

Black sesame is used quite a lot in sweet and savoury cooking in India, although some may associate it more with Japan, which is also known for matcha green tea. I love the way sesame and matcha go together, and a mix of dark and milk chocolate finishes these wafer-thin biscuits perfectly.

Makes 18–20

110g (4oz) caster sugar

110g (4oz) plain flour

2 large egg whites

2 teaspoons matcha green tea powder

110g (4oz) unsalted butter, melted

2 tablespoons black sesame seeds

100g (3½oz) milk chocolate

100g (3½oz) plain dark chocolate (minimum 70 per cent cocoa solids)
