Yields: Makes 4 Servings.

Ingredients:

1 1/2 pounds of ground beef

1 clove of garlic, minced

1 teaspoon of hot sauce

Salt and freshly ground black pepper, to taste

4 strips of bacon, diced

1/2 onion, chopped

1 cup of grated sharp Cheddar

4 burger buns, toasted.

Method of Preparation:

Prepare the grill to medium heat.

Combine the first four ingredients in a large bowl. Mix with your hands until everything is thoroughly combined.

Fry the bacon in a skillet until it is crispy. Place it on a paper towel to drain. Crumble the bacon once it has cooled.

Shape the meat into 8 thin patties, and set aside.

Sauté the onions in the bacon fat for about 5 minutes.

Place the onions, cheese, and bacon in a bowl. Put a spoonful of this mixture on 4 of the patties.

Set the other patties on top and pinch the edges to close over the bacon mixture.

Grill the burgers to desired doneness (about 4 minutes on each side for medium).

Serve on the buns. Top with additional cheese, if desired.
