AUTUMN PANZANELLA
An authentic panzanella involves tomatoes, which this does not. This does, however, mimic the piquant soaked bread nature of the Tuscan summer salad, while firmly placing itself in autumn – with the spotlight on kale, broccoli, roast shallots, thyme and tarragon.
The kale, which will be ever-present at the greengrocers from now until spring, is massaged but still raw and adds plenty of ballast. This could be a one-dish meal on its own merit, but it’s also particularly good accompanied by bresaola, and is even better as a side dish, or part of a banquet or buffet alongside rich meats and oily pink fish.
