SMART SHOPPING RICE VINEGAR
Rice vinegar is made from fermented rice, sugar, and water. Because of its sweet-tart flavor, rice vinegar is used to accentuate many Asian dishes. It comes in both seasoned and unseasoned versions; we prefer the clean flavor of unseasoned rice vinegar. Rice vinegar will keep indefinitely without refrigeration.
Spiced Swordfish with Avocado-Grapefruit Salsa
Serves 4
WHY THIS RECIPE WORKS: A spicy rub and a tangy salsa spruce up mild swordfish, while the intense heat of the broiler gives the fish a nice char. Other firm-fleshed fish such as bluefish, red snapper, or grouper can be used in place of the swordfish. If you can find ruby red grapefruit, its color and tangy sweetness work well in this dish.
