In 1926, Bruce Church, founder of Fresh Express, today’s popular produce line, started shipping the hardy variety of lettuce called crisphead lettuce from Salinas, California, all the way to the East Coast. He loaded the heads of lettuce in railroad boxcars and covered them with ice. When the trains passed into towns along the way, people would shout, “The icebergs are coming!”
