CHUCK-WAGON LIMA BEAN SALAD

1 clove garlic, split

1 cup cooked large dried lima beans, drained and chilled

2 stalks celery, thinly sliced

½ unpeeled cucumber, thinly sliced

2 medium tomatoes, cut into wedges

2 hard-cooked eggs, coarsely chopped

1 quart torn crisp salad greens

¼ cup salad oil

2 tablespoons red wine vinegar

½ cup crumbled blue cheese

Salt

Freshly ground black pepper

• Rub a salad bowl with the cut sides of the garlic and discard the garlic. Place the lima beans, celery, cucumber, tomatoes, eggs, and salad greens in the bowl and toss lightly.

In a small bowl, combine well the oil, vinegar, and blue cheese. Salt and pepper to taste. Pour over the salad and toss gently. Serve on chilled plates.
