When you are trying to think of what to do with leftover turkey (or chicken), you don’t need to be thinking of plain sandwiches again. Holidays will be far less boring at mealtimes when you serve up a bowl of leftover turkey soup. It is perfect to use those slices of bread to dip in the thick and creamy soup before you devour the tasty turkey pieces that are swimming around in the bottom of your bowl.

Cooking Time: 40 minutes
Ingredients • 4 cups of cooked turkey, shredded
• 1 x 10.75 oz. can of tomato condensed soup
• 1 x 28 oz. can of diced tomatoes
• 1 x 14 oz. can of black beans, rinsed and drained
• 2 cups of frozen corn
• 1/2 cup of sour cream
• 1/2 cup of onion, minced
• 4 cups of water
• 1 tbsp. of olive oil
• 3 garlic cloves, finely chopped or minced
• 2 tsps. of chili powder
• 1/2 tsp. of cumin powder
• 1/2 tsp. of dried oregano
• 1 cup of salsa
• 1 tbsp. of dried parsley
• 3 x chicken bouillon cubes
• 1/4 cup of fresh cilantro, roughly chopped
Toppings: • 1 cup of Cheddar and Monterey Jack. Shredded and mixed
• 1/2 cup of sour cream
• 6 cups of corn tortilla chips
• 3/4 cup of green onion, roughly chopped
• 1/2 cup of chopped fresh cilantro, chopped
Instructions
1. Place a large pot over medium heat. Heat the olive oil and add the minced onions. Cook for around 4 minutes until fragrant and the onions start to soften.
2. Add the garlic, oregano, cumin, chili powder. Cook while stirring for an additional minute.
3. Stir in the tomato soup, water, bouillon cubes, tomatoes, turkey, salsa, and the parsley. 4. Bring to a boil before reducing the heat. Simmer until the bouillon cubes have dissolved or for around 5 minutes.
5. Add the black beans, corn, cilantro, and the sour cream. Simmer for an additional 20 to 30 minutes.
6. Serve soup hot and top with any of the toppings from the above Ingredients.
