Cheesy Broccoli and Potato Soup

Cheese and broccoli—such a fabulous combination. I especially love it in the form of this classic soup. By puréeing the cooked potatoes with the vegetable broth, they act as a thickener for the soup. A thick soup is great for serving in individual bread bowls—it’s a great comfort meal all in one.
1 head broccoli, cut into bite-size pieces
1 tablespoon olive oil
1 cup chopped yellow onion
2 garlic cloves, minced
6 cups vegetable broth
2 pounds potatoes, peeled and cut into chunks
2 cups shredded cheddar cheese
1 teaspoon sea salt
¼ teaspoon ground black pepper
