Seafood risotto

Risotto is an Italian classic that is loved all over the world for its creaminess and versatility. Canadians, who love fish and seafood, have developed their own version of seafood risotto prepared with fish stock. Served with fennel and prawns, this makes for a uniquely tasty dish.

Serves 4

2 French shallots

½ bulb fennel

2 tbsp olive oil

240 g (7¾ oz) risotto rice

1 cup (250 ml) white wine

About 400 ml (14 fl oz) fish stock

200 g (7 oz) mussels or clams

400 g (14 oz) fish (e.g. cod)

2/3 cup (60 g) grated parmesan

1 tbsp cold butter

2 tbsp canola oil

200 g (7 oz) prawns, peeled and deveined
