1 small onion (finelychopped)

3 tablespoons olive oil

2 cups long grain rice

3 cups boiling water

1 cup chicken broth

1 teaspoon salt

1 cup frozen sweet peas

1 to 2 pounds medium raw peeled deveined shrimp

1 teaspoon paprika

1 teaspoon white wine

Preparation

In a heavy medium pan, saute ½ of the onion in 2 tablespoons of the olive oil until translucent on medium high heat.

Add the rice and stir fry it for about 1 minute to coat with the olive oil. Slowly add the boiling water, broth, salt and chicken broth and stir.

When the rice comes to a boil, cover and reduce heat to medium.

Cook for 15 to 20 minutes stirring only once or twice. Cover, and remove from heat.

Shrimp and Peas preparation:

In a small skillet on high, saute the remaining onion in 1 tablespoon of olive oil until translucent.

Add the shrimp and cook for about 1 minute or until the shrimp turns pink. Add the paprika and wine, and let cook for 1 minute longer. Add the peas, stir, and cook for 1 minute.

Stir the shrimp and peas into the rice and serve.
