POTLUCK PREP Prepare far enough in advance to allow time for proper chilling. For ease of transport in a cooler, arrange salad in a large rectangular Pyrex dish; cover with plastic wrap and set on freezer packs. Or, you could use a deep trifle dish and layer in the ingredients instead, starting with spinach. In either case, keep salad in the cooler until ready to serve, then toss with vinaigrette. Bring serving tongs.
