For sashimi, use your chopsticks to place a bit of wasabi directly on the fish. Then fold the fish, which makes it easier to hold, and if you want, dip it lightly into the soy sauce before eating. Letting the fish sit in the soy sauce or submerging it is a quick way to ruin the taste and frustrate a chef.

Occasionally your itamae will brush the top of the fish either with soy sauce or tsume sauce. This is most commonly done at the sushi bar or during an omakase. This addition creates a more beautiful presentation but also flavors the fish in the amount your chef deems necessary to enhance it. If you are served a piece in this manner, do not dip it in more soy sauce; simply enjoy as the chef has prepared it.

TIP: When eating gunkanmaki made with uni, ikura, or any loose filling that cannot be turned over and dipped into soy sauce, dip a piece of ginger into the soy sauce and then gently paint the top of your filling with it and eat it.
