For the dressing:
1. Mix together shallots, ginger, miso paste, vinegar and sesame oil.
2. Season with salt and pepper and set aside until ready to use.
3. When the fish and vegetables are cooked, serve immediately with steamed rice and drizzle over the dressing.
4. Serve.
Chinese Steamed Rice
PORTIONS: 5-6
PREPARATION TIME: 10 MIN
COOKING TIME: 25 MIN
Ingredients:
· 1 teaspoon sesame oil
· 1 tablespoon of oil
· 2 - 3 cloves of garlic, chopped
· ½ - 1 root ginger, 1 cm long, grated
· 1 small onion, finely chopped
· 2-3 star anise whole
· 2 tablespoons of Chinese rice wine Shaoxing wine
· 2 tablespoons of oyster sauce
· 1 tablespoon dark soy sauce
· 720 ml light chicken stock or vegetable stock
· Approx. 300 - 400 g long grain rice onions , green onions, sliced, for serving (optional)
· Pickle for serving, optional
· Pickled carrot for serving, optional
· 6 eggs 1 egg per person, fried, for serving (optional)
