3 large eggs
1 cup whole milk
2 cups Dry Bread Crumbs (here)
1 eggplant, peeled and cut into ¼-inch-thick rounds
1 cup olive oil, plus more as needed
1 recipe Sicilian Dough (here), proofed and prepared
All-purpose flour, for dusting
3 cups Cooked Sauce (here)
½ pound whole-milk mozzarella, preferably Polly-O, cut or torn into 1-inch pieces
¼ cup grated pecorino, plus more as needed
Preheat the oven to 450°F.
In a medium bowl, beat together the eggs and milk. Place the bread crumbs in a separate shallow bowl.
