BLUE BERRY TOPPING

2 cups wild blueberries

¼ cup sugar

1½ teaspoons all-purpose flour

zest of 1 lemon

Prepare the buckle batter through step 5.

Toss the blueberries with the sugar, flour, and zest in a large bowl until the fruit is evenly coated.

Follow the directions from step 7 above.

PEACH AND RASPBERRY TOPPING

1 cup raspberries

1 cup diced ripe peaches

¼ cup sugar

1½ teaspoons all-purpose flour

zest of 1 lemon

Prepare the buckle batter through step 5.

Toss the raspberries and peaches with the sugar, flour, and zest in a large bowl until the fruit is evenly coated.

Follow the directions from step 7 above.
